Heat oven to 350°F. Cook lima beans according to package directions. Drain and set aside. Heat butter or margarine in a medium skillet or saucepan over medium heat. Add onion and garlic; cook and stir 3 to 5 min. or until tender. Add flour; stir until smooth. Stir in tomatoes, salt, and pepper and cook for 1 min. Remove from heat and set aside. Spread cooked lima beans in the bottom of a 9 in. baking pan or 2 qt. casserole. Top with grated chaddar. Spread tomato mixture over cheddar, then top with tomatoes. Place in the oven and bake uncovered for 15 min. or until hot and bubbly.
Main dish tip: Spread 1 c. diced cooked ham over the grated cheddar. Top with tomato mixture and Parmesan. Bake as directed.
